Fresh fish smoked over oak fires

The Smokeries are an integral part of Mariner’s Wharf. Out of the smokeries comes our famous smoked snoek, smoked over genuine oakwood, from trees that are pruned or condemned. We are environmentally conscious, and no oak is especially cut from healthy trees.

When the Smokeries are operating, the warm freshly-smoked fish literally flies off the shelves in the Fishmarket. Besides snoek, other varieties of fish such as tuna and angelfish are also produced.

Two qualities of smoked snoek are produced in the smokeries, one being the top-of-the-range Cape Coast® brand from a recipe that has been passed down from one generation of the Dorman family to the next. It has a distinctive taste and homely brown colour, and is much sought-after by locals and tourists alike.

The Smokeries also produce the well-known Smokiesnoek® brand. This is more of a cooked product at a more affordable price.

An age-old tradition

Oak-wood fires are prepared and patiently tended to before the smoking process begins and the age-old process of salting and cleaning of the fish before smoking creates a bustle of activity in the Smokeries.
